2 cups seafood stock
1 cup heavy cream
1 tablespoon butter
1 onion, diced
2 cloves garlic, minced
1 teaspoon paprika
1/2 teaspoon cayenne pepper
1 cup shrimp, peeled and deveined
1 cup crab meat
1 cup mussels, cleaned
1 tablespoon fresh parsley, chopped
Instructions
In a large pot, melt the butter over medium heat. Add the onion and garlic, and sauté until translucent.
Stir in the seafood stock, cream, paprika, and cayenne pepper. Bring to a simmer.
Add the shrimp, crab meat, and mussels. Cook until the seafood is fully cooked, about 5-7 minutes.
Remove from heat and stir in fresh parsley before serving.
Notes
For a thicker bisque, blend part of the soup and return it to the pot.
