Ingredients

  • 2 cups chicken broth
  • 1 can coconut milk
  • 3 tablespoons red curry paste
  • 1 package dumplings
  • 1 cup mushrooms, sliced
  • 1 cup bok choy, chopped
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon fresh ginger, grated
  • 1 red chili pepper, sliced

Instructions

  1. In a large pot, combine chicken broth and coconut milk over medium heat.
  2. Stir in red curry paste, and bring to a simmer.
  3. Add dumplings and cook for about 5 minutes.
  4. Add the mushrooms, bok choy, fish sauce, and lime juice. Cook for an additional 5 minutes.
  5. Lastly, stir in ginger and red chili pepper. Serve hot.
