  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberry jam
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Line a 15×10 inch jelly roll pan with parchment paper.
  3. In a bowl, mix flour, baking powder, and salt.
  4. In a separate bowl, beat the eggs and sugar until light and fluffy.
  5. Fold the flour mixture into the egg mixture gently.
  6. Spread batter evenly in the pan.
  7. Bake for 12-15 minutes until golden.
  8. Once baked, invert the cake onto a clean kitchen towel dusted with powdered sugar.
  9. Spread the raspberry jam over the cake.
  10. Roll the cake tightly using the towel.
  11. Let it cool completely, then unroll and whip the cream with powdered sugar and spread it on.
  12. Roll it again and slice to serve.
