1 cup quinoa
4 slices turkey bacon
1 cup cherry tomatoes, halved
1 cup spinach, chopped
1/2 red bell pepper, diced
1/2 avocado, sliced
2 tablespoons olive oil
1 teaspoon garlic powder

Instructions
Rinse the quinoa under cold water and cook according to package instructions.
In a pan, cook the turkey bacon until crispy. Remove and chop into pieces.
In the same pan, add olive oil and sauté the cherry tomatoes and red bell pepper until softened.
Add spinach and cook until wilted.
