  • 1 cup white chocolate chips
  • 2 cups all-purpose flour

  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg, pumpkin puree, and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the white chocolate chips.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet.
  8. Bake for 12-15 minutes or until the edges are golden.
  9. Let cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

Notes

  • For a different flavor, try adding dried cranberries or chopped nuts.
  • Ensure the pumpkin puree is not pumpkin pie filling!
