  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3 slices turkey bacon, cooked and crumbled

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
  2. In a large bowl, mix the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla until well combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  5. Fold in the crumbled turkey bacon gently.
  6. Fill each muffin cup about 2/3 full with the batter and bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  7. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a healthier option, you can substitute half of the all-purpose flour with whole wheat flour.
  • These muffins can be served warm or at room temperature.
