Ingredients

  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 1 cup pineapple chunks
  • 1 cup bell peppers, diced
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ginger
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in bell peppers and cook until tender.
  4. Add pineapple chunks, soy sauce, garlic powder, ginger, and black pepper.
  5. Cook for another 5 minutes, stirring occasionally.
  6. Serve the mixture over cooked rice.

Notes

  • For added flavor, marinate the chicken in soy sauce for 30 minutes before cooking.
  • You can substitute brown rice for additional fiber.
