A delicious and easy one pot meal that combines black beans, fajita flavors, and pasta.

  • 1 can black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 large bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 teaspoons fajita seasoning
  • 4 cups vegetable broth
  • 1 cup corn
  • 1 cup diced tomatoes

Instructions

  1. In a large pot, heat olive oil over medium-high heat.
