  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 1 cup onions, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 4 potatoes, diced

Instructions

  1. In a large pot, heat vegetable oil over medium-high heat.
  2. Season beef with salt and pepper, then brown in batches.
  3. Add onions and garlic, cooking until softened.
  4. Stir in tomato paste, then add beef broth, carrots, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and let simmer for about 1.5 hours.
  6. Add potatoes and continue to simmer until tender.
  7. Remove bay leaf before serving.
