- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup unsalted butter, melted
- 4 (8 ounce) packages cream cheese, softened
- 1 1/4 cups granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1 cup fresh strawberries, pureed
- Preheat the oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and mix well.
- Add eggs one at a time, mixing well after each addition. Stir in sour cream.
- Pour half of the cheesecake batter over the crust. Swirl in pureed strawberries. Pour the remaining batter on top and swirl again.
- Bake for 50-60 minutes until the center is set. Let cool and refrigerate for at least 4 hours before serving.
