  • 1/2 cup boiling water

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add oil, egg, and vanilla to the dry ingredients and mix until smooth.
  4. Carefully stir in boiling water until well combined.
  5. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  7. Allow the cupcakes to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
