  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 2 large eggs
  • 12 mini graham cracker crusts
  • 2 cups fresh berries (for topping)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, beat the cream cheese until smooth.
  3. Add the sugar and vanilla extract, mixing until well combined.
  4. Beat in the sour cream and then add the eggs one at a time, mixing well after each addition.
  5. Place the mini crusts on a baking sheet.
  6. Pour the cheesecake mixture into each crust, filling them about 3/4 full.
  7. Bake for 20-25 minutes, or until the centers are set.
  8. Allow to cool, then refrigerate for at least 2 hours.
  9. Top with fresh berries before serving.
