  • 4 medium zucchini
  • 8 ounces turkey bacon, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup black olives, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchini in half lengthwise and scoop out the insides to create boats.
  3. In a skillet, cook the diced turkey bacon until crispy.
  4. Add the scooped zucchini insides, cherry tomatoes, olives, and seasonings to the skillet, cooking for 5-7 minutes.
  5. Stuff the zucchini boats with the mixture and top with mozzarella and feta cheese.
  6. Drizzle with olive oil and bake for 20-25 minutes, or until the zucchini is tender.
