- 4 medium zucchinis
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup black olives, sliced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/4 cup fresh parsley, chopped
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the insides.
- In a bowl, combine the quinoa, tomatoes, feta, olives, garlic, oregano, and parsley.
- Fill the zucchini halves with the mixture.
- Place in a baking dish and bake for 25-30 minutes.
- Serve warm.
