  • 4 medium zucchinis
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup black olives, sliced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the insides.
  3. In a bowl, combine the quinoa, tomatoes, feta, olives, garlic, oregano, and parsley.
  4. Fill the zucchini halves with the mixture.
  5. Place in a baking dish and bake for 25-30 minutes.
  6. Serve warm.
