  • 2 slices turkey bacon
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup spinach
  • 1 tablespoon olive oil
  • Salt to taste

Instructions

  1. In a non-stick skillet, cook the turkey bacon over medium heat until crispy. Remove and chop into small pieces.
  2. In the same skillet, add olive oil and sauté the diced onions and bell peppers until soft.
  3. Add spinach and cook until wilted.
  4. Pour the egg whites into the skillet, stirring gently to combine with the vegetables.
  5. Cook until the egg whites are set, then add the chopped turkey bacon back in.
