- 1 head cauliflower
- 1 cup shredded cheddar cheese
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup chopped chives
- In a large pot, heat the olive oil over medium heat. Add onion and garlic and sauté until translucent.
