A rich and creamy soup that combines the goodness of cauliflower with cheesy indulgence.

Ingredients

  • 1 head cauliflower
  • 1 cup shredded cheddar cheese
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup chopped chives

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add onion and garlic and sauté until translucent.
  2. Add the cauliflower and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes until cauliflower is tender.
  3. Use an immersion blender to purée the soup until smooth.
  4. Stir in the heavy cream and cheese until melted and fully incorporated.
  5. Season with salt and black pepper, and serve warm topped with chives.

Notes

  • This soup can be garnished with additional cheese and chives for extra flavor.
  • Feel free to add cooked bacon bits for a meaty variation.
