- 4 cups vegetable broth
- 1 onion, diced
- 2 carrots, sliced
- 3 cloves garlic, minced
- 1 lemon, juiced
- 1 teaspoon dried oregano
- 2 tablespoons olive oil
- Salt to taste
- Fresh parsley for garnish
- Soak chickpeas overnight in water.
