A refreshing and nutritious soup that combines the flavors of Greece with hearty chickpeas.

Ingredients

  • 1 cup dried chickpeas
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 1 lemon, juiced
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. Soak chickpeas overnight in water.
  2. Drain and rinse the chickpeas, then add them to a pot with vegetable broth.
  3. Bring to a boil and then simmer until chickpeas are tender.
  4. In a separate pan, heat olive oil and sauté onions, garlic, and carrots until softened.
  5. Add the sautéed vegetables to the pot with chickpeas.
  6. Stir in lemon juice and oregano, and season with salt.
  7. Simmer for an additional 10 minutes.
  8. Serve hot, garnished with fresh parsley.

Notes

  • For a thicker soup, blend a portion of the chickpeas before serving.
  • Adjust the lemon juice according to taste preference.
