Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can diced tomatoes with green chilies
  • 1 cup chopped jalapenos
  • 8 ounces cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Add chicken breasts and cook until no longer pink, about 5-7 minutes.
  3. Pour in chicken broth and add tomatoes and jalapenos. Bring to a boil.
  4. Reduce heat, add cream cheese and stir until melted and smooth.
  5. Stir in cheddar cheese and sour cream.
  6. Season with chili powder, cumin, salt, and pepper.
  7. Simmer for 10 minutes, then serve hot.

Notes

  • This soup can be spicy due to the jalapenos; adjust quantities to taste.
  • For extra crunch, top with crushed tortilla chips before serving.
