1/2 cup peanut butter
1/4 cup soy sauce
1 tablespoon brown sugar
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon lime juice
1/4 cup coconut milk
2 tablespoons vegetable oil
1/4 cup chopped green onions
1/4 cup crushed peanuts
Instructions
In a blender, combine peanut butter, soy sauce, brown sugar, garlic, ginger, lime juice, and coconut milk. Blend until smooth.
In a large skillet, heat vegetable oil over medium heat. Add chicken thighs and cook until browned on both sides and cooked through, about 6-7 minutes per side.
