  • 1 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon red pepper flakes
  • 1 cup coconut milk

Instructions

  1. In a bowl, mix together peanut butter, soy sauce, honey, garlic, ginger, red pepper flakes, and coconut milk.
  2. Heat a pan over medium heat and add the chicken thighs, cooking until browned on both sides.
  3. Pour the peanut sauce over the chicken and simmer for 15 minutes until the chicken is cooked through.
  4. Serve over rice or noodles, garnished with chopped peanuts and cilantro.
