Ingredients

  • 4 cups broccoli florets
  • 1 cup shredded carrots
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 4 cups vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to sauté mode and add olive oil.
  2. Add the diced onion and sauté until translucent.
  3. Stir in the garlic powder and onion powder, then add broccoli florets and shredded carrots.
  4. Pour in the vegetable broth, secure the lid, and cook on high pressure for 5 minutes.
  5. Once cooked, do a quick release and stir in the heavy cream and shredded cheddar cheese until melted and well combined.
  6. Season with salt and pepper to taste. Serve hot.
