Delicious and healthy homemade blueberry protein muffins that are easy to make.

Ingredients

  • 1 cup oat flour
  • 1/2 cup protein powder
  • 1/2 cup unsweetened applesauce
  • 1/2 cup honey
  • 1 cup fresh blueberries
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix oat flour, protein powder, baking powder, and salt.
  3. In another bowl, whisk together eggs, honey, applesauce, and vanilla extract.
  4. Combine the wet and dry ingredients and stir until just mixed.
  5. Fold in the blueberries gently.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.
