A rich and creamy potato soup infused with cheddar cheese, garlic, and herbs, perfect for a comforting meal.

Ingredients

  • 4 large potatoes
  • 1 cup cheddar cheese, shredded
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Peel and dice the potatoes.
  2. In a large pot, add the vegetable broth and potatoes, and bring to a boil.
  3. Add the minced garlic and thyme, and simmer until the potatoes are tender.
  4. Use an immersion blender to blend the soup until smooth.
  5. Stir in the heavy cream and cheddar cheese until melted.
  6. Season with salt and pepper, and serve hot.
