  • 3 ripe bananas
  • 1/3 cup melted coconut oil
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups whole wheat flour
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the bananas until smooth.
  3. Stir in the melted coconut oil, then mix in the honey or maple syrup.
  4. Add the eggs and vanilla extract, mixing until well combined.
  5. Sprinkle the baking soda and salt over the mixture and mix in.
  6. Gently fold in the flour until just combined, then add walnuts if using.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Let cool before slicing and serving.
