  • 1 cup fresh blueberries
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the Greek yogurt, honey (or maple syrup), eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Fold in the blueberries.
  5. Pour the batter into a greased muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool before serving.
