  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/2 cup chopped macadamia nuts
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas, crushed pineapple, and both sugars until well combined.
  3. Stir in the softened butter, eggs, and vanilla extract until smooth.
  4. In another bowl, whisk together the baking soda, salt, and flour.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Fold in the shredded coconut and chopped macadamia nuts.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes, or until a toothpick comes out clean from the center.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
