  • 3 ripe bananas, mashed
  • 1/2 cup pineapple, crushed and drained
  • 1/2 cup shredded coconut
  • 1/2 cup macadamia nuts, chopped
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar. Add in the eggs and mix well.
  3. Stir in the mashed bananas, pineapple, coconut, and macadamia nuts.
  4. In another bowl, mix the flour, baking soda, and salt. Gradually add to the banana mixture.
  5. Pour the batter into a greased loaf pan.
  6. Bake for 60-70 minutes or until a toothpick comes out clean.
  7. Let cool before slicing and serving.

Notes

  • For added flavor, consider toasting the macadamia nuts before adding them to the batter.
