A moist and flavorful Hawaiian banana bread enriched with pineapple, coconut, and macadamia nuts for a tropical twist.

  • 3 ripe bananas
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/2 cup macadamia nuts, chopped
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the bananas until smooth.
  3. Add the crushed pineapple, shredded coconut, and chopped macadamia nuts to the mashed bananas.
  4. In another bowl, cream together the butter and brown sugar until fluffy.
  5. Beat in the eggs and vanilla extract into the butter mixture.
  6. Combine the dry ingredients: baking soda, salt, and flour in a separate bowl.
  7. Add the dry ingredients to the banana mixture alternately with the butter mixture, mixing until just combined.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 60-70 minutes, or until a toothpick comes out clean.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For a sweeter bread, add more sugar to the batter.
  • Store any leftovers in an airtight container to maintain moisture.
