  • 1 pound ground beef
  • 1 cup onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 cup enchilada sauce
  • 8 tortillas
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add onion, garlic powder, chili powder, and cumin. Cook until onion is soft.
  4. Spread 1/2 cup enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the beef mixture, roll them up, and place them seam-side down in the dish.
  6. Pour remaining enchilada sauce over the top and sprinkle with cheese.
  7. Bake for 20 minutes, or until cheese is melted and bubbly.

Notes

  • For extra flavor, add black beans or corn to the beef mixture.
  • Top with sour cream or fresh cilantro before serving.
