Ingredients

  • 1 pound chicken thighs
  • 4 cups chicken broth
  • 1 cup orzo pasta
  • 2 lemons, juiced
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1/4 cup fresh dill, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, sauté onion, carrots, celery, and garlic until soft.
  2. Add chicken thighs and broth. Bring to a boil.
  3. Reduce heat and let simmer for 20 minutes.
  4. Remove chicken, shred it, and return it to the pot.
  5. Add orzo and cook for another 10 minutes.
  6. Stir in lemon juice and dill before serving.

Notes

  • For extra flavor, add a bay leaf while simmering.
  • Top with more dill before serving for freshness.
