1 whole chicken, cut into pieces
4 cups chicken broth
1 medium onion, diced
2 carrots, sliced
2 celery stalks, sliced
1/2 cup orzo pasta
2 large lemons, juiced
2 tablespoons olive oil
Salt and pepper to taste
Fresh parsley for garnish
Instructions
In a large pot, heat olive oil over medium heat and add the chicken pieces.
Cook until browned on all sides, then remove and set aside.
Add onions, carrots, and celery to the pot and sauté until softened.
Return the chicken to the pot, add chicken broth, and bring to a boil.
Reduce heat and simmer for about 30 minutes, or until the chicken is cooked through.
Remove the chicken, shred the meat, and return it to the pot.
Add orzo and cook until tender.
Stir in lemon juice and season with salt and pepper.
Serve hot, garnished with parsley.
