- 2 pounds beef short ribs
- 4 cups beef broth
- 2 cups onions, sliced
- 1 cup white wine
- 2 tablespoons olive oil
- 2 teaspoons fresh thyme
- 1 teaspoon sugar
- Salt to taste
- Pepper to taste
- 4 slices French baguette
- 1 cup Gruyère cheese, grated
- Preheat the oven to 325°F (165°C).
- In a large Dutch oven, heat olive oil over medium heat. Add the onions and cook until caramelized.
- Add the beef short ribs and brown on all sides.
- Pour in the white wine and scrape up any browned bits from the bottom.
- Add the beef broth, thyme, sugar, salt, and pepper. Bring to a simmer.
- Cover and transfer to the oven for 2.5 hours.
- Remove from the oven, shred the beef, and return to the pot.
- Toast the baguette slices and place them on top of the soup, then sprinkle with Gruyère cheese.
- Broil until the cheese is bubbly and golden.
