  • 2 pounds beef short ribs
  • 4 cups beef broth
  • 2 cups onions, sliced
  • 1 cup white wine
  • 2 tablespoons olive oil
  • 2 teaspoons fresh thyme
  • 1 teaspoon sugar
  • Salt to taste
  • Pepper to taste
  • 4 slices French baguette
  • 1 cup Gruyère cheese, grated

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a large Dutch oven, heat olive oil over medium heat. Add the onions and cook until caramelized.
  3. Add the beef short ribs and brown on all sides.
  4. Pour in the white wine and scrape up any browned bits from the bottom.
  5. Add the beef broth, thyme, sugar, salt, and pepper. Bring to a simmer.
  6. Cover and transfer to the oven for 2.5 hours.
  7. Remove from the oven, shred the beef, and return to the pot.
  8. Toast the baguette slices and place them on top of the soup, then sprinkle with Gruyère cheese.
  9. Broil until the cheese is bubbly and golden.

  • For added flavor, use homemade beef broth.
  • Let the soup sit for a few hours for the flavors to meld.
