A comforting and creamy lasagna soup featuring turkey bacon, perfect for chilly days.

  • 1 pound turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (28 oz) crushed tomatoes
  • 12 oz lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 tablespoon Italian seasoning
  • salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add onion and garlic; sauté until soft.
  3. Add chicken broth and crushed tomatoes; bring to a boil.
  4. Add the broken lasagna noodles and Italian seasoning; cook until noodles are tender.
  5. Stir in ricotta and mozzarella cheese; mix until creamy.
  6. Crumbled turkey bacon on top before serving.
