Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup zucchini, diced
  • 1 teaspoon dried thyme
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chicken breasts and cook until browned, about 5 minutes per side.
  3. Remove the chicken and set aside. In the same pot, add the carrots, celery, and zucchini and sauté for 5 minutes.
  4. Add the garlic and thyme, stirring for about 1 minute.
  5. Pour in the chicken broth and bring to a simmer.
  6. Return the chicken to the pot and cook for an additional 15 minutes.
  7. Remove the chicken, shred it, and return it to the pot.
  8. Season with salt and pepper to taste, then serve hot.

Notes

  • To enhance flavor, add a squeeze of lemon juice before serving.
  • Feel free to add any of your favorite vegetables.
