  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 4 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced

Instructions

  1. In a skillet, heat olive oil over medium heat. Add onion, garlic, and bell pepper; sauté until soft.
  2. Transfer vegetables to the crockpot. Add diced tomatoes, black beans, corn, vegetable broth, chili powder, cumin, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Before serving, stir in avocado, cilantro, and lime juice.
