- 4 cups corn kernels
- 1 pound chicken breast
- 6 slices turkey bacon
- 1 cup diced potatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a skillet, cook turkey bacon until crispy. Remove and crumble.
- In the same skillet, sauté onions and garlic until translucent.
- In the crock pot, combine corn, chicken, cooked turkey bacon, potatoes, sautéed onions and garlic, chicken broth, salt, and pepper.
- Cook on low for 6-8 hours or until chicken is cooked through.
- Remove chicken, shred it, then return to the pot.
- Stir in heavy cream and cook for an additional 30 minutes.
Notes
- For a spicier version, add diced jalapeños.
- Use frozen corn for convenience.
