A hearty and delicious Crock Pot Chicken Corn Chowder recipe made easy with the addition of turkey bacon.

Ingredients

  • 4 cups corn kernels
  • 1 pound chicken breast
  • 6 slices turkey bacon
  • 1 cup diced potatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a skillet, cook turkey bacon until crispy. Remove and crumble.
  2. In the same skillet, sauté onions and garlic until translucent.
  3. In the crock pot, combine corn, chicken, cooked turkey bacon, potatoes, sautéed onions and garlic, chicken broth, salt, and pepper.
  4. Cook on low for 6-8 hours or until chicken is cooked through.
  5. Remove chicken, shred it, then return to the pot.
  6. Stir in heavy cream and cook for an additional 30 minutes.

Notes

  • For a spicier version, add diced jalapeños.
  • Use frozen corn for convenience.
