  • 2 pounds beef chuck roast
  • 3 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 4 cups beef broth
  • 16 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Soak the dried chiles in hot water for 15 minutes to soften.
  2. In a blender, combine softened chiles, onion, garlic, cumin, oregano, black pepper, salt, and beef broth. Blend until smooth.
  3. Place the beef chuck roast in the crock pot and pour the sauce over the meat.
  4. Cover and cook on low for 8 hours or until the meat is tender.
  5. Shred the meat and mix it with the sauce in the crock pot.
  6. Warm the corn tortillas on a skillet and fill them with the birria meat.
  7. Top with chopped cilantro and a squeeze of lime before serving.
