- 2 pounds beef chuck roast
- 3 dried guajillo chiles
- 2 dried ancho chiles
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon black pepper
- 1 teaspoon salt
- 4 cups beef broth
- 16 corn tortillas
- 1 cup chopped cilantro
- 1 lime, cut into wedges
- Soak the dried chiles in hot water for 15 minutes to soften.
- In a blender, combine softened chiles, onion, garlic, cumin, oregano, black pepper, salt, and beef broth. Blend until smooth.
