4 fillets salmon
2 cups fresh spinach
1 can artichoke hearts, drained and chopped
3 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons olive oil
1 teaspoon Italian seasoning
Salt and pepper to taste
Instructions
Heat olive oil in a large skillet over medium heat.
Season the salmon fillets with salt and pepper, then place them in the skillet skin-side down. Cook for 4-5 minutes on each side until golden brown and cooked through.
Remove the salmon from the skillet and set aside.
In the same skillet, add minced garlic and sauté until fragrant.
Add the chopped artichokes and spinach, cooking until the spinach is wilted.
Pour in the heavy cream and bring to a simmer, then stir in the Parmesan cheese and Italian seasoning.
Add the salmon back into the skillet, spooning the sauce over the fillets. Cook for an additional 2 minutes, then serve warm.
