  • 8 ounces mushrooms, sliced
  • 1 cup wild rice
  • 4 cups chicken broth
  • 2 cups milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onions and garlic; sauté until translucent.
  3. Add the sliced mushrooms and cook until soft.
  4. Stir in the chicken and cook until browned.
  5. Add the chicken broth and bring to a boil.
