A delicious and comforting soup that captures the flavors of traditional lasagna, featuring turkey bacon and chicken ham for a unique twist.

Ingredients

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 ounces) tomato sauce
  • 4 cups chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cups lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups baby spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same pot, add ground turkey, onion, and garlic; cook until browned.
  3. Add tomato sauce, chicken broth, basil, and oregano; bring to a boil.
  4. Add broken lasagna noodles and cook until al dente.
  5. Stir in ricotta, mozzarella, and Parmesan cheese until melted.
  6. Add spinach and cooked bacon; stir until spinach wilts.
  7. Season with salt and pepper before serving.

Notes

  • For an extra creamy texture, add more ricotta cheese.
  • You can substitute any kind of pasta for lasagna noodles.
