A warm and comforting soup that combines the flavors of creamy green enchiladas with tender chicken.

  • 2 cups cooked chicken, shredded
  • 1 can green enchilada sauce
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen corn
  • 1 cup black beans, rinsed and drained
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, sauté onion and garlic until soft.
  2. Add shredded chicken, green enchilada sauce, chicken broth, corn, black beans, diced tomatoes, cumin, chili powder, salt, and pepper.
  3. Bring to a boil, then reduce heat and let simmer for 15 minutes.
  4. Stir in heavy cream and cilantro just before serving.
  5. Serve hot and enjoy!
