- 2 cups cooked chicken, shredded
- 1 can green enchilada sauce
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup frozen corn
- 1 cup black beans, rinsed and drained
- 1 cup diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup cilantro, chopped
- In a large pot, sauté onion and garlic until soft.
- Add shredded chicken, green enchilada sauce, chicken broth, corn, black beans, diced tomatoes, cumin, chili powder, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 15 minutes.
- Stir in heavy cream and cilantro just before serving.
