  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 cup heavy cream
  • 1 cup corn
  • 1 bell pepper, chopped
  • 1 cup shredded cheese
  • 1 avocado, diced
  • 1 lime, juiced
  • 1 package tortilla strips

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent.
  2. Stir in minced garlic, cumin, and chili powder, cooking for another minute.
  3. Add chicken breast and cook until no longer pink.
  4. Pour in chicken broth and diced tomatoes, bringing the mixture to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Stir in heavy cream, corn, and bell pepper. Cook for an additional 10 minutes.
  7. Serve hot, topped with cheese, avocado, lime juice, and tortilla strips.
