Cranberry Crumb Bars are a delightful dessert perfect for any occasion, combining a tart fruit filling with a buttery crumb topping.

  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a medium bowl, combine cranberries and sugar, then add vanilla extract.
  3. In another bowl, mix flour, oats, baking powder, and salt. Stir in the butter until crumbly.
  4. Press half of the crumb mixture into the bottom of the prepared pan.
  5. Spread the cranberry mixture over the crumb layer.
  6. Top with the remaining crumb mixture.
  7. Bake for 40-45 minutes until golden brown. Let cool before serving.
