Ingredients

  • 1 cup wild rice
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 2 cups spinach, chopped
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery; sauté until softened.
  3. Stir in the garlic, thyme, and sage; cook for 1 minute.
  4. Add the wild rice and vegetable broth; bring to a boil.
  5. Add the bay leaf, reduce heat, and simmer for 45 minutes.
  6. Stir in the spinach; cook for an additional 5 minutes.
  7. Remove the bay leaf and season with salt and pepper before serving.

Notes

  • This soup can be made in advance and stored in the refrigerator.
  • For added creaminess, stir in a splash of coconut milk before serving.
