- 1 pound turkey bacon
- 2 cups diced chicken ham
- 3 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 potatoes, diced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and pepper to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add the onion and garlic to the pot, sautéing until the onion is translucent.
- Stir in the carrots, potatoes, and chicken ham, cooking for about 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Add the black beans, corn, oregano, cumin, and bacon back to the pot. Reduce heat and simmer for 20 minutes.
- Season with salt and pepper to taste before serving.
Notes
- For an extra kick, add some chopped jalapeños.
