Cowboy Stew is a hearty and comforting dish that combines turkey bacon and chicken ham for a deliciously satisfying meal.

  • 1 pound turkey bacon
  • 2 cups diced chicken ham
  • 3 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add the onion and garlic to the pot, sautéing until the onion is translucent.
  3. Stir in the carrots, potatoes, and chicken ham, cooking for about 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Add the black beans, corn, oregano, cumin, and bacon back to the pot. Reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper to taste before serving.

Notes

  • For an extra kick, add some chopped jalapeños.
  • Serve with crusty bread for a complete meal.
