  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated

  • Salt and pepper to taste
  • 2 cups spinach, fresh

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the onion and cook until translucent.
  2. Add the garlic and ginger, cooking for an additional minute.
  3. Stir in the curry powder and cook for 30 seconds.
  4. Add the chicken thighs and brown on both sides.
  5. Pour in the coconut milk and bring to a simmer.
