- 4 strips turkey bacon
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 2 tablespoons Dijon mustard
- 1 tablespoon fresh tarragon
- 1 shallot, minced
- 3 egg yolks
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
