A delicious Chicken Zucchini Casserole that is easy to make and perfect for all ages.

Ingredients

  • 1 pound chicken breast, diced
  • 2 medium zucchini, sliced
  • 1 cup shredded mozzarella cheese
  • 1 cup diced tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and add the diced chicken. Season with garlic powder, Italian seasoning, salt, and pepper.
  3. Cook until the chicken is no longer pink, about 5-7 minutes.
  4. In a baking dish, layer the cooked chicken, zucchini slices, and diced tomatoes. Top with shredded mozzarella cheese.
  5. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
