1 tablespoon olive oil
1 onion chopped
2 carrots sliced
2 celery stalks sliced
3 cloves garlic minced
1 pound chicken breast diced
4 cups chicken broth
1 teaspoon thyme
1 bay leaf
2 cups mixed vegetables (peas, corn, green beans)
Salt to taste
Pepper to taste
Instructions
In a large pot, heat the olive oil over medium heat.
Add the onion, carrots, and celery, sauté until softened.
Stir in the garlic and cook for another minute.
Add the diced chicken and cook until no longer pink.
Pour in the chicken broth, add thyme and bay leaf, and bring to a boil.
Reduce heat and let simmer for 20 minutes.
Add the mixed vegetables and cook for another 10 minutes.
Season with salt and pepper to taste. Remove the bay leaf before serving.
