Ingredients

  • 1 pound boneless chicken breasts
  • 4 cups chicken broth
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 cup diced potatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, cooking until onions are translucent.
  2. Add the chicken breasts and cook until browned on both sides.
  3. Add chicken broth, mixed vegetables, potatoes, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 20-25 minutes, or until chicken is cooked through.
  5. Remove chicken, shred it, and return it to the pot.
  6. Stir in fresh parsley before serving.
